It all started when I looked into the vegetable drawer only to discover a heaping amount of vegetables. I totally forgot that I had bought eggplant, peppers and tomatoes in a few different varieties. So with this very busy week ahead of me, BMW Championship, work, oh and school, I decided to throw all of it in a pot, saute it down, and voila a mass amount of Ratatouille to last me the rest of the week.
There is so many different ways to make this wonderful and very healthy dish. Containing nothing but vegetables, herbs and spices this dish is high in nutrients and low in calories and fats.Tomatoes are the key ingredient followed by onions, eggplant, peppers and garlic per my taste buds.
I encourage you to throw together you own recipe although below you can find my latest recipe. I have a tendency not to measure so bear with me here considering only some measurements are given.
1 medium sized eggplant
2 medium tomatoes
2 medium onions
1 yellow bell pepper
1 red bell pepper
A handful of sunburst cherry tomatoes
Red Pepper Flakes
Salt & Pepper
*Chop all the vegetables up in bite size pieces. Add all to a large pot at once. Add spices to your taste except the parsely. Saute on medium/low heat until all the juices are about gone and vegetables are tender. Could take 30-40 mins depending on amount of vegetables. Sprinkle with parsley once done and serve
