Hi again 🙂
My life = work, school, work, school, work, school. I think you get the idea. I am the type of person who just can not sit still for too long. With this new quarter started, I found myself with two mornings free and completly bored and itching to do something. I mean there is always shopping, umm shopping and did I mention shopping?! After one week of that, I found myself not only with a smaller bank account but it was, dare I say, actually getting old. Never thought I would say that. So I preceded to do what any full time college student who already has one job would do. Indeed you guessed it, I found myself employeed with job number two. Needless to say, my schedule just got ten times more crazy and honestly I feel even better and more energized than before!
All of this has taken a toll on my experimentations in the kitchen. No bueno. Last week I lived on Veggie Chili. I really wish I was kidding folks. So today, I put my lil ol brain to work and experimented with some pancakes. If you don’t know, I love pancakes. Sometimes I like to think I did nothing but eat them in a past life.
These pancakes are not exactly your traditional, fluffy ones. While they may be lacking in those categories they are full of flavor and nutrtional benefits. Yeah!
1 Cup of Oats
1/4 Cup of Steel Cut Oats
2 Tbls of Coconut Milk
2 Tbls of Pumpkin Butter
Cinnamon & Pumpkin Pie Spice
Put oats in the blender and make an oat flour. Add in banana, eggs and milk. Blend. Add in pumpkin butter and spices. Batter should be a pourable consistency. Cook on medium to low heat on skillet. Should only take about 45 seconds or less per side.
Comfort food doesn’t mean it has to be full of calories and fat. Give them a try today and you will be pleasantly surprised 🙂
