PB&J Muffins

I feel like I haven’t written in forever and it is killing me! Which leads to my next statment, I haven’t cooked in forever! It is basically the worst thing ever. For the first time, literally, I bought canned soup.

T.Swift’s new cd Red, Starbucks coffee with soy milk, pumpkin spice oatmeal and veggie soup. My absolute favorite things at the moment. My all time favorite thing you ask? Peanut butter, bananas and jelly. All separate, good. All together, absolute heaven. Browsing the shelf’s at school today I came acrose a dozen or so brown bananas. I quickly jumped on the opportunity to confiscate these little babies before anyone else could. Throughout the rest of my shift I was thinking what am I going to do with them? I mean I have made banana bread countless times. Using that powerful foodie noggin of mine, I thought why not peanut butter and jelly banana muffins?! I mean come on, my three favorite things, in one. How could I go wrong?

Before I put the recipe up I must warn you, these are not exactly my normal healthy muffins. I had to indulge a bit. Afterall I walked out the door at 7:15 to a sprinkling of rain, no sun and the bitter cold. So today, this is necessary 🙂

  • 1 3/4 cups all purpose flour
  • 1/4 cup toasted wheat germ
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 tablespoon cinnamon
  • 1 cup mashed ripe bananas (about 3 medium)
  • 1/4 cup honey
  • 1/4 cup applesauce
  • 1/2 cup chunky peanut butter
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/4 cup (packed) dark brown sugar
  • 2 heaping tablespoons of jelly

Preheat oven to 400 degrees

Mix all wet ingredients in a bowl with electric beaters. Add in dry ingredients and continue to mix just until incorporated. Portion into muffin cups of your choice. Bake until a light golden brown and the center is done.

I used mini muffin pans in which it took about 10 mins to cook completly.

Until next time I shall continue to jam out to T.Swift, fill my tummy with loads of peanut butter and have many days full of laughter, baking and friends. 6 more weeks until my college days are over!
