PB & J Paleo Bites

Well I am going to start off by saying that this is my second time writing this post considering I just accidentally deleted my first one……no comment.

Peanut butter and jelly, they are made for each other, we all know that. The classic sandwich we were all given growing up. Wheat, white, rye or french bread. Crunchy or creamy peanut butter. Strawberry or the classic grape jelly. Sometimes if it was a good day it might even be in a heart shape instead of that squareish shape. Today things have changed. I literally can’t remember the last time I had one of those old school sandwiches. I prefer non processed, real, grown up style PB&J these days. Can you blame me?


Working in the restaurant kitchen I am always tasting this, having a bite of this, liking it, hating it but never passing it up. I’ve got keep my energy up and stay in line with those boys. Being the only gal in the kitchen is a challenge/blessing at the same time. They really just don’t understand my secret love affair with a certain (teenage) boy band or care about the newest style I want my hair or most importantly how my jeans are looking on me that day. Surely you all must understand…


Finding a snack before hand that is filling yet nutrious really isn’t that hard for me considering I always have either Quest Bars, Lara Bars, dried fruits or mixed nuts on hand. Until the other day! I realized I have ALL of the ingriedients to make LaraBars in my cabients. Right past the coconut oil, past the pumpkin seeds I grabbed the Raw Almonds. Then onto the fridge to grab the No Sugar Added Dates along with the Orange Infused Figs. One more thing I needed, Cinnamon, my go to add in.

1 cup Almonds
4 Dates (pitted)
2 Prunes
1 tsp Cinnamon
1 tsp Water

Place all but the water in a food processor and pulse. Then switch to the low speed. It will become crumbly. Add in the water and scrape down the bowl. Put it to high speed now. Let it go for about 4 mins or so. The texture will be crumbly yet moist. Once finished take a cookie scoop and portion out. Make more consistent shapes my further forming with your hands. Place in either fridge or freezer. Wait roughly 30 mins and then try not to devour all of them at once…!

Super easy. Super healthy. Rather inexpensive. The possibilites are endless. I am SO looking forward to trying out different combinations.


FYI just because these are paleo do not think you must be in a cave man like minded state to enjoy. Everyone should give these a try! Bringing back life into the old classic.
