Natural Maple Coffee Bites

Hello folks!

“If you don’t swim, you’ll drown…” Lyrics from one of my favorite songs at the moment. The more I listen and read into those words, the more real and meaningful they become. Must keep moving forward and never look back. Must keep learning and exploring to discover new things. Must keep on keeping on. I really think I may have found the true meaning of happiness. Funny thing is I didn’t have to look too hard for it. I am always snacking, never really having a full meal, except for breakfast. HELLO eggs and pancakes with a latte, perfection. Okay, so maybe that doesn’t happen everyday and it is probably a good thing it doesn’t but if you do one thing everyday, eat breakfast people! But this happiness thing, let me explain…

It comes in a small one bite ball. Two bites at most. Full of nutrients. Goodness. Coffee, did I mention coffee?! They taste like cookie dough without eggs, flour, processed sugars, etc… whole hearted goodness will be had in this natural, can be organic, one bite of bliss.

I use Unsweetened Organic Shredded Coconut. I have only found it at Whole Foods or specialty health food stores. Starbucks coffee, all they way baby.

1 Cup of Oats
1/2 Cup of Pecans
1 Tbls Ground Coffee
2 Tbls Almond Butter
1/4 Cup of Maple Syrup
1/2 Cup of Raisins
1/2 Cup Toasted Coconut

In sauté pan, toast the coconut on medium until it becomes slightly golden. Turn off the burner and let sit in pan.

Line a sheet pan with wax paper. In a food processor add oats, pecans, coffee, almond butter, maple syrup and raisins. Pulse until all has come together into one. Using a small cookie scoop, form balls and place onto pan. Once finished, roll into the toasted coconut and place back on the tray. Place into freezer for an hour or so to harden. Transfer to a container and place back in freezer for keeping. Makes roughly 1.5 dozen, depending on size made.

Hold up, please tell me what you are thinking. Sounds like the easiest recipe ever right?! Well IT IS. Pretty soon you might be downing these instead of those 5 boxes of Thin Mints you ordered…
