Fun Fact! I have never written a blog with out drinking wine…well maybe like 2 or three but only because coffee was consumed at that time. Welcoming myself back in normal fashion with a glass of red wine titled, “Help is Here”. How appropriate for this day and age of my lovely life.

Where does one even begin?? Jumping right into things. I MISS BLOGGING. I might have been stuck in a rut of nights filled with margaritas and wine after being in the kitchen for far too many hours, pretending as if I actually have a life outside of work. I mean I attend boy band concerts, do yard work and eat pizza like am a college student and not some 25 year old girl just trying to make sure she doesn’t run out of dry shampoo at ANY given time. Turning 26 in a month is looking real good I’d say at this point… fingers crossed. That about sums up this whole year. Short, simple, sweet and very unmemorable, in a way…

If there is one thing that has kept me sane this year, besides copious amounts of coffee and Targets $1 section, doing cakes has got to be the answer. Seriously think I would be literally insane if I didn’t do things like this in my so called free time. Number one love and something like an addiction I would say. When your sister asks you to stop making cakes because even though she goes to the gym 4 days a week, she claims she is getting “fat” considering the amount of baking one does. Taking her title away for number one taste tester real soon…

Between weddings. Birthdays. And Just Because cakes/events I have loved what has come out of my kitchen thus far this year. Its almost over BUT I can promise you that there will still be a few more surprises in store.

Heartbreaks, 12 hour days in the kitchen, realizing your pant zipper has been down all service and many days of spilt coffee, I am super thankful for constant texts from far away friends. Seriously, awesome. Thanks for keeping me going. AND to my mother, for always doing the dishes!!! I promise not to take such a long break again. Spread the word, Nessa is back!

Classically Chic Bridal Shower

It is currently 12:52 AM as I write this sentence. I most likely won’t be falling asleep, let me rephrase that, attempting to fall asleep for at least another hour. Yes, YouTube is my essential go to tonight to snatch up some quality time admiring my favorite boy band…no shame, never…to pass by the time. Time to not think about work in the kitchen. Time to not think about the amount of Ravioli’s I’ve got to make tomorrow. Time to not think about if I shall workout or consider the 10 + plus hours on my feet in the kitchen my workout. Stop me!

So this is the part where I am filling you in on what I did this past weekend. A lovely bridal shower for two very sweet people. Things like this actually put me at ease and in my natural element.

Welcome to the new(ish) site. I’ve been waiting for this moment for a while. I’ve had so many ideas, so many thoughts, SO many recipes just waiting to be shared, I couldn’t simply contain it all anymore. People are always asking me for a recipe for a healthier treat, a dinner that can still be hearty but contain no meat, the list can go on and on. Well your questions are all going to be answered! I have taken some time to read and (sort of) figure it all out so I can give you all the best healthier version of one of your favorites. I encourage you to try a recipe straight up as instructed and then make it again but change one or two ingredients. For instance this recipe that I am sharing was intentionally supposed to be Oatmeal Chocolate Chip cookies. Never been a fan, on to raisins it was.

When I think of a cookie, I think of a somewhat round small object. Crunchy on the outside and soft and chewy on the inside. We all have our own opinions on what a cookie shall be but just listen here. These “cookies” well, not so much fall into that category YET still have the taste of the original. Did I mention they are VEGAN & GLUTEN FREE?!

The recipe is adapted from Clean Food by Terry Walters

2 cups rolled oats
1 cup brown rice flour
3/4 cup shredded unsweetened coconut
1 tablespoon ground cinnamon
1/4 teaspoon sea salt
3/4 cup maple syrup
1/2 cup vegetable oil
1 teaspoon vanilla extract
1 cup chopped pecans
1/2 cup raisins

Preheat oven to 350 degrees F

In a large bowl, mix oats, flour, coconut, cinnamon and sea salt. In a separate bowl whisk together syrup, oil and vanilla extract. Pour the wet mixture into the dry mix. Mix until well combined. Fold in the pecans and raisins. Spray a baking sheet tray with non-stick spray. Evenly distribute the mixture half way across the pan. Press so all is laid out evenly. Place in oven and bake for 20 minutes or until a golden brown color appears on top. Take out of oven and cool. They will harden as they cool. Break apart into pieces and enjoy with coffee, tea, ice cream or simply as a snack.

I made these two days ago and I am predicting by myself that I have eaten roughly two-thirds, already… share with your friends, co-workers, the little neighbor boy who shovels your driveway even!
